That would work good. Build your curved or notched piece and attach it to where it needs to go before you cut your peddle. The same idea as if doing a rear frame c notch. Once the notch or curve is installed then you can cut out the section hitting. Finish welding it up, slap a little paint on it and there you have it. Your peddle will sit in the same exact location while clearing the wheel tub at the same time. Heres a mini truckin article that they did a while back for the weekend warrior project.
