chevy alternator

Ive seen some people putting high amp chevy alternators in there mazdas. I want to do this too but dont know what everyone is running. Can you run a one wire alternator and just discard the two factory wires coming off the stock alternator or get a regular alternator and hook it up?? If you use the reg one which wires go where.
