I figure ill do all I can from the bottom end within reason...piston, ring, rod bearings, wrist pins. I dont see the point in swapping the water pump and timing belt or head gasket since they are currently doing their job bit I wouldn't mind having them on hand for future usr when the time comes.

Well, you'll need to pull the cylinder head (and do head gasket) to get the pistons and rings done.

A few air cooled vw's.

Explain to me why I have to pulled the head and ill do it. Never done one of these before.

On another note the oil pan doesn't want to come loose. Looks to be a lot of rtv or similar on there. I can't even seem to get a razor blade between the two surfaces. Any ideas? Never had one stuck like this before.

Once you remove the crank shaft, you can remove the pistons from the bottom, but there isn't a snowball's chance in hell that you'll get them back in that way. At least not without destroying the rings.

RTV was used by the factory to install the pan. A gasket scraper, or a stiff putty knife will help, and you may need to straighten the flange before reinstall.
Do not use a gasket when installing the pan. It will leak.
