pressure switch

just got my stuff from jason and i got 2 viar 380s and a pressure switch that says it shuts off at 125 psi. the kit says it comes w/ a 200 psi switch. i think its adjustable but i guess i jus dont know how they work someone please explain the on/off thing to me. thanks
