I have not HAD to drive in winter with bags, but I have. First thing that comes to mind is water! If you have a water trap between the tank and the valves - thats good for the valves but not necessarily good for the water trap. If you don't have a trap - your valves will eventually freeze up.
If your lucky enough and your system doesn't leak air, then raise it up and go for it. You certianly are not going to hurt the bags any.
As for the air pump, it's probably not gonna care much either if it's cold. Unless of course, water vapor freezes the reed valves. But after the pump has run some, they should make enough heat to be OK.

Get some airbrake antifreeze. Put it in the tank and you should be trouble free.
