Nitrogen does not change pressure depending on temp.  Nos is nitrous oxide...

For most practical purposes, nitrogen can be considered as an ideal gas. The ideal gas law states: PV = nRT with: P- absolute pressure of the gas; V- volume of the gas; n- number of moles of gas (quantity of gas); R- the ideal gas constant; T- the thermodynamic (absolute) temperature of the gas. Therefore if the temperature increases, to keep the system at equilibrium, the pressure and/or the volume must also increase. If the temperature decreases, the pressure and/or the volume must decrease.

it will expand with temp. they transport it in bulk by refridgerating it. you shouldnt have too much pressure change with such a small volume. but it will change when you said the next day it was full what psi do you mean?

1200 pounds was in the bottle this morning and it was empty day before yesterday

sounds like your pressure gauge is failing. there is no way it can go from "empty" to 1200 psi.  did you try airing it up when it was "empty" just to check it?

it had like 100 never fully empty and no its right its expanding the bottle is in direct humid texas heat lol..but yes i have to admit i stretched the empty a lil far i'm sure but it had 100 and then in two days of direct heat it had more...if i'm dumb than the guy at my local coastal welding supply is an idiot to cause even he said its gonna expand IDK just wanted to share my weird incident

so when the gas contracts, can you still use it as if it were full? since the same amount of gas is there just compressed

sounds like your regulator might be having issues goign from 100 to 1200 over night. But yes during the hot summer days you will notice a couple 100 psi higher from expansion.
