New to TVs

Im updating my interior soon and was curious as to wether my speakers would sound the way I want, and if I can use the 3 TVS to multi-task and then switch back to running all together? I want to be able to run the PS2 on one, movie on the other and music on the main or visa versa and then be able to switch back to the all the same. I dont know how these speakers are going to sound yet but I want to be able to have a great DVD experience and keep great sound for music. My soon to be equiptment is as follows - 7" JVC Indash (KD-AV7010\RB), Two Lanzar 7" headrest monitors (SV7HR), Two Infinity 6x9" Refrence (9612i's), Two 6 1/2" Infinity Kapa (62.7i's). I dont know what subs I should get, any reccomendations for anything would be great.

that jvc deck has a 1 video out, and 1 video in, not sure about the headrest tv's. they'll have to have at least 2 video inputs, then you should be good

How many outputs/inputs do I need for the indash?
