How important is cat converter?

What will change if I remove completely my cat coverters? I have two on my 02 fullsize chevy..w/ 02 sensors before and after the cats..same thing for a 95 taco...WIll it affect performance or cut on lights? I'm in S.C. so emissions doesnt exist..
