I haven't done this truck specifically, but I didn't want your post to go unanswered!
There shouldn't be much of a harness to deal with on an '87 S10, other than for your headlights and a few engine controls. Just cut the harness loose from anything it's tied to so you have as much slack as possible, then route it either down along the frame rail or along the top of the fender to keep it clear of your wheels. If you're tubbing the firewall, put a new hole in it for the wires to pass through and run a new grommet- your local auto parts store should have several sizes to choose from.
From there, just make sure the harness is securely tied so it doesn't droop and rub on anything, and you're all set!
Each vehicle will present unique issues that you'll have to work around as you hit them...
